Easy Oatmeal Chocolate Chip Squares

In case you need a way to use up chometz ingredients, these are the oatmeal squares I’ve been making recently:

(Tweaked from a recipe in Dinner Done)

 

1 c. oats (any kind)

1/2 c. flour (can use all-purpose, whole wheat, or spelt)

2 tblsp. sugar

1/4 c. brown sugar (Tip: 1/4 c. equals 4 tblsp., if that’s easier to measure)

1/4 tsp. salt

1/4 tsp. baking soda

1/4 c. oil

1 egg

1/2 tsp. vanilla extract

1/4 c. chocolate chips (mini works well here)

 

Mix everything in a bowl and press into a parchment-lined square or round pan. Bake on 350 for 22 minutes.
